Once Again Nut Butter

The best peanut butter in the world is made by Once Again Nut Butter. You probably won't find it in your local grocery store, even a huge one like Larry's Markets. I get it in bulk directly from the manufacturer, but if you prefer not to buy it in bulk, you might want to email them and ask for a reseller in your area. Most peanut butter manufacturers remove most of the valuable peanut oil and replace it with the cheapest oil they can find. The only advantage to the consumer is a cheaper product; removing the peanut oil degrades the flavor.

You can easily find peanut butters with the peanut oil intact -- Adam's is the most popular, or any "organic" peanut butter. You can even grind peanuts yourself at some natural food stores, such as the PCC Co-op in Seattle. But all of these use cheap peanuts. Though better than (hold nose) Skippy's, a better-flavored and more full-flavored peanut butter would result from using higher-quality peanuts.

Once Again Nut Butter uses only the best peanuts, and they remove none of the peanut oil. You won't find a peanut butter with a better or richer flavor.

Once Again has two kinds of peanut butter -- "old-fashioned" and Valencia. Valencia is better. They also have almond, cashew, and sesame seed butters. The peanut and almond butters are available smooth or crunchy. They also sell unground nuts, and several kinds of honey. For details, ask them to send you their price list.

Of course, it's inconvenient that the oil separates; you have to stir it every time, or keep it refrigerated. I prefer mine at room temperature, so to minimize the inconvenience of stirring, I get 9 lb. tubs and pour small amounts into a wide-rimmed plastic container with an air-tight cover that I picked up at a grocery store. It holds 3 lbs. The very wide top makes it quick and easy to stir each time.

Their almond butter is for the gods, and much better than any other I've tried -- the brands you find in natural food stores are practically flavorless in comparison. Spread it super thick on a sandwich (no jelly), and wash it down with a crisp New Zealand Gala apple. You'll think you've died and gone to heaven.

The Valencia peanut butter makes incredible peanut butter cookies. I just use a simple recipe -- the one in The Joy of Cooking. They're great with chocolate chips, too -- try to get Guittard (http://www.guittard.com/) chocolate chips; which are significantly better than Hershey's or Ghirardelli. Almond butter cookies are great, too.

As you can see from these prices, Once Again is more expensive than grocery store peanut butters. But once you've tried it, you won't want any other kind. Though more expensive, Once Again is a much better value than other peanut butters.
